Expressions to plot default physics expression

How can I see the expressions used to plot the default variables from each physic?

Example:

I am working with the lubricant shell. I have the possiblity to plot the velocity field on a the working surface. The software has no problem in drawing it.

This velocity field varies along the film thickness. I suppose the programe is doing an average between top and lower surface and it is drawing it. How can I see which expression is using to plot it?
